Mixed fermentation is the process of fermenting wort into beer by manually adding lab grown microorganisms to the wort the morning after it is brewed. This wort destined to be a mixed fermentation beer is cooled in a sterile tank over night and the next morning we introduce a blend of microorganisms into the wort before it is pumped into barrels.

Over the six years we’ve been brewing at the Monolith we’ve shifted the bulk of our production away from mixed fermentation. We still make some mixed fermentation beers, but these are now shifting to be more special projects and lower alcohol products. We are also moving away from purchasing microorganisms from yeast suppliers and instead have been introducing microorganisms cultivated and grown in our lab. We’ve found that the consistency and quality is superior as we’ve been able to optimize growth techniques for our unique processes.
