Galaxy & Saaz 2023 is a blend of 1, 2, 3 and 4 year Spontaneous Fermentation barrels, dry hopped with Galaxy and Saaz hops.
7.4% ABV — Galaxy & Saaz is the fifth release in the Dry Hop Series and the first that is 100% Spontaneous Fermentation. This blend is dry hopped with a unique pairing of hops from drastically different regions: Australian Galaxy and Czech Saaz. This hop combination brings a fun balance of tropical fruit, ripe juiciness, floral, spice, and herbaceous complexity, which complements the depth of the spontaneous beer and the bright citric acidity.
We use our coolship immediately after brewing to both cool the wort overnight and inoculate the wort via microbes delivered into the vessel by the air of Edmonton.
