Homage to the Old Ones 2023 is a 100% Spontaneous Fermentation blend of only 4 year barrels. It won Gold at both the Concours International de Lyon and World Beer Cup for Belgian Style Sour Ales in 2024.
6.9% ABV — Homage to the Old Ones is a very special blend of 4 year Spontaneous Fermentation barrels. Historically brewers would take the brewery’s highest quality barrels to make a blend that would showcase their best product. When scavenging our barrel cellars, the brewers came across barrels that were of such exemplary quality, they knew it would be a perfect homage to such blends. The use of only 4 year barrels highlights the depth and complexity that can be developed when time and attention is given. The result is a blend that has balance and poise in its acidity & texture, deep wine, leather, & tobacco flavours, and a complex range of fruit & floral aromatics.
We use our coolship immediately after brewing to both cool the wort overnight and inoculate the wort via microbes delivered into the vessel by the air of Edmonton.
