Substantially Complete 2021 is a Mixed Fermentation blend of 1, 2 & 3 year Marsala, Red Wine and Cognac barrels. It won the Gold Medal at Concours de Lyon in 2023.
5.6% ABV — Substantially Complete reflects The Monolith both as a physical entity and the beer it produces. This blend is a snapshot of our mixed fermentation program year to year, using Marsala, Red Wine and Cognac barrels of different vintages. After fermenting for 1, 2, & 3 years using a house-blend of microorganisms, the result is our quintessential blend— adventurous, yet balanced, with bright peach and citrus flavour, light oxidative and wine notes, highlighted by a medium acidity. We hope you like it!
Saccharomyces (common brewers yeast), Brettanomyces (so-called “wild” yeast) and yeasts that our brewers have isolated from the environment are added to already cooled wort, and put into barrels for fermentation.

While we occasionally have an amazing barrel that doesn’t need to be blended with others to be maximally delicious we’ve found that blending multiple barrels together gives us the ability to corral our unpredictable process and provide consistently balanced beers.
