DEC. 15th RELEASE — We’re coming up to a bottle release that we’ve been looking forward to since the day that we started planning The Monolith. Convergent Evolution is at the convergence of Spontaneous and Mixed Fermentation, and our first beer to include spontaneously fermented beer in the blend. Fermented in red wine barrels for 2, 3 & 4 years, this blend combines the unique characteristics of both methods. The blend of 75% Spontaneous and 25% Mixed Fermentation gives the depth and complexity of Spontaneous with the brightness and vibrance of Mixed Fermentation. The result is a balanced beer with stone fruit and ripe apple aromatics, savoury wine depth, with a bright citrus finish and medium acidity.

Pair your beer with a side of Gougères, savory puffs made with Convergent Evolution beer cheese and wood-fired apple chutney. This snack was designed by chef David from The Monolith’s taproom to pair perfectly with this complex beer.

Spontaneous fermentation is a technique used by only a handful of breweries across the world. A vessel called a coolship is used to cool wort down prior to fermentation. The large surface area of wort lends itself to spontaneous fermentation, where yeast and bacteria present in the cooling air inoculate the wort. After fermenting in barrels for several years, the result is a beer of singular, unmistakably complex flavour. You’ll see what we mean when you try Convergent Evolution!
