Located in the Ritchie neighbourhood in the heart of Edmonton, Biera is a casual/fine-dining restaurant co-located with the Blind Enthusiasm Market Brewery. Biera is focused on delivering a high-quality menu designed to compliment our house made beer.

Key Responsibilities:

  • Promote, work, and act in a manner consistent with the mission of BIERA.
  • Inspect, clean and maintain food preparation areas such as equipment and work surfaces or serving areas to ensure safe and sanitary food-handling practices.
  • Ensure food is stored and cooked at correct temperature by regulating temperature of ovens, broilers, grills, fryers, roasters and other kitchen equipment.
  • Ensure freshness of food by checking for quality, keeping track of old and new items and rotating stock. Handles, stores and rotates food products and supplies according to restaurant policies and procedures.
  • Responsible for the quality of products served. Knows and complies consistently with the restaurant’s standard portion sizes, cooking methods, quality standard and kitchen rules, policies and procedures.
  • Stock and maintain sufficient levels of food products at line stations to support a smooth service period. Keep track of personal inventory for each station, report inventory needs to the chef as per defined procedures and timelines.
  • Season and cook food according to recipes or personal judgement and experience.
  • Bake, roast, broil and steam meats, fish, vegetables, and other foods.
  • Test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils.
  • Prepare ingredients for cooking, including portioning, chopping, and storing food before use.
  • Weigh, measure and mix ingredients according to recipes or personal judgement, using various kitchen utensils and equipment.
  • Follow proper plate presentation and garnish set up for all dishes.
  • Wash, peel, cut and seed fruits and vegetables to prepare them for consumption.
  • Carve and trim meats such as beef, veal, ham, pork and lamb for hot or cold service or sandwiches.
  • Butcher and dress animals, fowl or shellfish; or cut and bone meat prior to cooking.
  • Follow policies and procedures for the safe operation and storage of tools, equipment, and machines.
  • Closes the kitchen following the closing checklist for kitchen stations and assists team to complete all closing tasks
  • Develop and maintain positive working relationships with others; support team to reach common goals; listen and respond appropriately to the concerns of other employees.
  • Attend all scheduled employee meetings and offer suggestions for improvement.
  • Substitute for or assist other cooks during emergencies or rush periods. Fill-in for fellow employees where needed, to ensure guest service standards and efficient operations.
  • Other duties as assigned.

Minimum Requirements

  • Two or more years of experience in kitchen preparation and cooking.
  • At least 6 months experience in a similar capacity.
  • Able to work in standing position for long periods of time (up to 9 hours)
  • Move, lift, and carry objects weighing up to 25 pounds without assistance.
