One Night in Dunham
This collaboration with our friends from Twin Sails Brewing started one fateful night in the town of Dunham. We were lodged together in a house on a hill, for Brasserie Dunham’s Foudres Unis festival. After sharing a few beers, the plan for this collab was hatched! We departed from our usual base wort, opting to include Cara Aroma and Munich malts. After fermenting for 16 months in Spanish red wine barrels the resulting blend has medium acidity, bright red fruit notes, light wine tannin, and a dry finish.
The original Nordlichter was a crushable light lager packed with flavour at a low ABV. In true mad scientist fashion we took a batch of Nord and put it into second-fill Pineau des Charentes barrels. Nordlichter Barrel-Aged retains the clean crushability of the original but is now punctuated with subtle red wine notes in the aroma and finish.
Come ACME BRO
Come ACME BRO results from the lagerization of fall-favourite BRO in collaboration with our best bro Corey from ACME Meat Market. What’s that building on the label you ask? It’s ACME’s 100 year old original location! We’re honored to bring back BRO’s smooth chocolate notes and dark fruit finish for this special Centennial Collaboration!
A couple years ago we did a collab with our pals at Brassneck in Vancouver. Hefteknik is our new take on that original collab. As before we made a beer with wheat and rye plus German yeast, and added some interesting hops (African Queen and Chinook). The result is lightly bitter, with banana notesbut also somemelon and spice.
Take a Charentes on Me
This amber ale made with Belgian yeast was put into fresh Pineau des Charentes barrels shipped straight from Bordeaux and aged for 14 months. It came out of the barrel at 8.1% ABV and transformed into a light brown beer with ruby highlights. It shows light oxidized notes, akin to a sherry, with aromas and flavours of dried fruit and brown sugar.
ZestyZee, a German-style wheat ale, is our most popular summer beer. It is unfiltered with traditional banana and spice notes, low bitterness, crisp effervescence, and a gently tart, thirst quenching finish. Super-dry and quaffable, this is the ultimate patio beer.
Mentis Oculi is the second release in the Dry Hop Series. This blend of one and a half year mixed-ferment barrels is a collision of two worlds. Old World Tettnang and New World Simcoe, two wildly different hops, blend delightfully to dry hop this beer. The result is honey floral, ripe papaya, and light menthol hop character balanced by a full, round texture and medium-light acidity. We hope you like it.
Fruitful Pursuits: Plum
The Fruitful Pursuits Series is made in late summer when ripe fruit is in season and at peak quality. For 2019 Plum we used hundreds of kilograms of freshly harvested Damson and President Okanagan plums which stayed on this mixed-ferment blend for 2 months. The result is bright ruby-purple colour, very prominent plum character, and a medium-high acidity.
Un Petit Peu
Un Petit Peu (Translation “A Little Bit”) is the first offering in our Dry Hop Series. This blend of one year old mixed-ferment barrels was lightly dry hopped with the French hops Mistral and Barbe Rouge. The unique hops impart red berry aroma and flavor to this bright, light acidity beer. We hope you like it.
